Oatmeal Chocolate Chip Protein Bars

If you're tired of store-bought protein bars tasting bleh like I am, try these homemade protein bars out! They are full of clean ingredients with healthy fats, complex carbs, and protein to help keep you full and taste 100% natural. They're also way more cost effective than going out and buying 10 protein bars.

These have about 13-15 grams of protein and 230-245 calories depending on what type of protein powder you use!

Prep Time: 10 min

Cook Time: 1 min

Servings: 10 bars

Ingredients:

  • 2 cups rolled oats (I like to slightly blend mine for a smoother texture)

  • 1/2 cup cashew butter (or any nut butter)

  • 1/4 cup honey

  • 1/2 cup vanilla protein powder

  • 1/4 cup almond milk

  • 1/3 cup chia seeds

  • 1/4 cup chocolate chips (+ a few Tbsp for drizzling)

  • 1 tsp coconut oil

Steps:

  1. Mix everything well in a large bowl

  2. Lay out parchment paper or plastic wrap on a shallow pan, and spread coconut oil across to avoid the bars sticking.

  3. Spread out mixture with a spatula so that you can cut out about 10 bars. Melt and drizzle chocolate across the top. Freeze for an hour before cutting into bars.

  4. Store in the fridge or freezer! I personally like the texture of the freezer since they never completely freeze. :)
