Oatmeal Banana Pancakes

Did somebody say guilt free pancakes??? Using simple ingredients such as oats, bananas, eggs, and coconut oil these fluffy guys are both delicious and full of fiber and flavor! This recipe is only two steps and batter that was not used can easily be saved for another day. Top with your favorite pancake flavors like whipped cream, berries, cinnamon, maple syrup, chocolate chips, etc...






Serves: 10-12 pancakes

Ingredients:

  • 2 eggs

  • 1/4 cup monk fruit sugar

  • 2 Tbsp maple syrup

  • 1 tsp cinnamon

  • 1/2 tsp salt

  • 1 tsp baking powder

  • 1/4 cup coconut oil (liquid)

  • 1-1 1/4 cups milk (plant-based or dairy)

  • 1 mashed banana

  • 3 cups oats

  • 1 tsp ghee or coconut oil for cooking

* I like using monk sugar since it is low calorie and most similar to sugar in texture; if using a non-nutritive sweetener like stevia or Splenda, do NOT use 1/4 cup because it will be way to sweet, use 2 tsp instead. You can also use regular sugar since monk fruit sugar is a 1:1 alternative.


Steps:

  1. Blend ALL ingredients well using a blender, food processor, or hand blender.

  2. Heat about 1/2 - 1 tsp ghee or coconut oil in a pan over medium heat and add about 1/4 cup of batter for each pancake; cook until you see little bubbles forming on the top and the spatula can slide easily under the pancake before flipping and cooking the other side for the same amount of time

  3. Enjoy!
