Meal Prep Baked Oatmeal Squares

Prepping some baked oatmeal squares for the week are one of my favorite ways to change up my mornings and make them a breeze. You can add in whatever you want to these, for example:

  • Chocolate chips

  • Berries (blueberries, raspberries, blackberries...)

  • Peanut or almond butter

  • Coconut flakes


You can either heat them up in the microwave for 45 sec to 1 min (depending on how many you're heating at one time you may need to add extra time. My personal way to eat them is to heat up a square or two and enjoy with some Greek yogurt and berries. If you want to enjoy them cold, they are delicious that way as well!





Prep Time: 10 min

Cook Time: 30 min

Servings: 12 squares


Ingredients:

  • 2 ripe mashed bananas

  • 2 eggs

  • 1/4 cup melted coconut oil

  • 1.5 cup milk of choice

  • 2 Tbsp maple syrup or honey

  • 3 cups rolled oats

  • 1/4 cup chia seeds

  • 1/2 cup vanilla protein powder

  • 1 tsp cinnamon

  • 1 tsp baking soda

  • Pinch of salt

  • Coconut oil or butter to grease the pan (about 1 tsp)

Steps:

  1. Preheat the oven to 350ºF

  2. Grease a 9x13 (or a similar size) baking dish with coconut oil or butter

  3. Add all of your ingredients to the baking dish and mix well.

    1. For a smoother texture, use an immersion blender to in the pan to blend OR add your ingredients to a blender and slightly blend before putting ingredients in the pan.

  4. Bake for 30 minutes, let cool for about 10 minutes then cut into squares. Store in the fridge or freezer, reheat when you're ready to eat or enjoy cold!
