My absolute favorite time of year is around the corner... soup season!!! I love soups because they are so incredibly easy to pack tons of nutrients, protein, and veggies all in one pot. They are also perfect for meal prep at the beginning of the week, and they freeze so well. This soup has so many warm spices for a soothing flavor, and lots of nutritious veggies!

Ingredients:
2 Tbsp avocado oil
1 yellow onion, diced
4-5 cloves garlic, minced
2 Tbsp ginger (minced or paste), or 1 tsp ginger powder
1 lb. lean ground turkey
3 large carrots, sliced
1 Yukon gold potato, cubed
2 zucchini, sliced
1 can navy beans, drained
1/2 tsp: turmeric, smoked paprika, cumin
1 tsp salt
1 dash of pepper
4-5 cups chicken broth*
*For this recipe I added 1 Tbsp + 1 tsp chicken bouillon to 4ish cups boiling water since I didn't have chicken broth, so either way works
Steps:
Sauté your onion in oil for a couple of minutes until fragrant, then add ginger and garlic. Cook for another minute or two then add ground turkey. Mix and continue to cook until the ground turkey is cooked all the way through.
Add your spices and veggies, mix well then add your broth and beans.
Bring to a boil, then simmer for about 30 minutes.
