Chickpea Pasta Salad

My family always loves making pasta salad for get togethers, the lake, and any occasion. We all love it, but I wish it was just a little bit more clean. With this recipe, you get the same great taste, but with cleaner ingredients. One of the best things about Banza chickpea pasta is that it's actually made out of chickpeas. It has almost double the protein, half the carbs, double the fiber, and packed with so many more nutrients than regular pasta.

This is a great summer dish that works as a side, on top of a salad, or just eat it by the fork full. Add some extra lemon, cilantro or parsley on top for some extra flavor and presentation. The hemp hearts in this recipe add even more nutrients and a little extra boost of protein.

Cook time: 7-10 min.


Ingredients

- 1 box Banza chickpea pasta (you can use any shape but I like the shells)

- 1 cup cherry tomatoes, halved

- 1-2 cup chopped spinach

- 1/4 cup cilantro

- 1 Tbsp hemp hearts

- 1 cup shredded rotisserie chicken

- 1 Tbsp olive oil

- 1 Tbsp aged white vinegar

- juice of half of a large lemon

- 1/4 tsp garlic powder

- 1/4 tsp onion powder

- 1/4 tsp salt & pepper, more or less to taste

Steps

1. Cook chickpea pasta according to box, rinse and cool with cold water.

2. Chop cilantro, then add all ingredients into a large bowl and mix.
