Seared Scallops with Garlic Cauliflower Rice

This recipe may seem somewhat complicated, but I promise it's so easy.... this literally took me maybe 20-30 minutes to make including prepping all of the ingredients. Plus this is just too good not to try.

Servings: 4

Prep time: 10-15 min.

Cook time: 20 min.

Ingredients

- 1 lb scallops (3-4 per person)

- 4 tsp ghee, divided

- 2 bags pre-riced cauliflower

- 1/2 cup chopped onions

- 2 cups spinach

- 1 Tbsp minced garlic

- 1 tsp onion powder

- 1-2 Tbsp coconut aminos

- 1/2 tsp salt

- pepper to taste

- optional: sprinkle of parmesan

Steps

For the cauliflower rice

1. Steam cauliflower rice in bag in the microwave for 3 minutes so it will cook faster; heat 2 tsp ghee in a large skillet and sauté onions until transparent.

2. Add cauliflower rice to skillet and cook for about 5 minutes, stirring occasionally; add garlic, coconut aminos, salt, pepper, onion powder, then cook for another 5-10 minutes, add spinach in the last 2 minutes.


For the scallops

1. Season scallops with salt and pepper on each side.

2. Heat a metal pan to be fairly hot, then add 2 tsp ghee (more if needed, make sure there is enough for each scallop), place scallops into pan and cook for about 5 minutes on each side.

3. Scoop cauliflower rice onto a plate, top with scallops and optional parmesan cheese.
