Have you ever made homemade cashew or almond milk and didn't know what to do with the pulp? You can also just used soaked then blended cashews if you haven't made any homemade nut milk recently. I wasn't craving anything sweet so I really wanted to get creative with my leftovers. I also bought this seasoning at Trader Joes called "everything but the bagel" seasoning and it honestly can go on anything. I think with every vegetable I've roasted and piece of toast I've made I have put this seasoning on it. Which gave me an idea... I didn't even want to begin to try and make bagels (because I don't have a bagel mold), so biscuits it was. The seasoning is completely optional but I highly recommend because it is BOMB. These are darker in color because I used an unbleached whole wheat flour, but you can also use gluten free or another flour of your choice.

I'm not exactly sure how much this recipe makes (some were eaten before the pics were taken) but I'm pretty sure it's somewhere between 14-16 depending on how big you make the dough pieces.
Ingredients
- 1 cup cashew pulp (leftover from homemade cashew milk) OR 1 cup cashews, soaked for 30 min - 2 hrs in hot water then blended
- 1 cup unbleached whole wheat flour; gluten free also works
- 1/4 cup nutritional yeast
- 1 Tbsp baking powder
- 1/2 tsp baking soda
- 1 tsp sea salt
- 1/2 cup unsweetened almond or cashew milk
- 4 Tbsp cold unsalted butter or ghee
- optional: Trader Joes "everything but the bagel" seasoning
Steps
1. Preheat oven to 450º F on bake
2. Mix all dry ingredients in a large bowl until combined, then mix in cashew pulp; chop up butter into small pieces then mix in butter
3. Slowly add in almond milk and mix until dough becomes crumbly but sticks together, similar to a pizza dough
4. On a large surface (I used a cutting board) sprinkle a layer of flour on the surface, then transfer dough, sprinkle more on top and fold over about 4 to 5 times
5. Fold dough into a 1 inch think circle, then cut into 1-2 inch long / deep circles (I used a small lid which made it easier); optional: sprinkle with Trader Joes "everything but the bagel" seasoning
6. Place on parchment paper and bake for 12-15 minutes
