Vegan Chocolate Coconut Protein Cookies

Just in time for spring break!!! These little treats won't even make you feel bloated in your swim suit. Honestly, I just through some ingredients that I thought would taste good and turn into dough, and what do ya know? They actually turned out pretty bomb. You don't necessarily have to put the chocolate protein in this recipe, I just really like is and it adds extra nutrients and protein. The Garden of Life chocolate brand is my favorite protein powder ever, even in plain water it tastes like chocolate milk. If you sprinkle extra coconut on top of these, the oven slightly toasts them which is really nice.

TIP: nix the baking soda, don't bake them and roll them into balls and pop them in the refrigerator for a no bake dessert – so good.

Ingredients

- 1/2 cup coconut flour

- 1/2 cup nut butter (almond or peanut works best)

- 1 scoop chocolate protein powder (plant-based or whey)

- 1 Tbsp pure maple syrup

- 2 Tbsp unsweetened shredded coconut

- 1/3 cup almond milk

- 1/2 tsp baking soda

Steps

1. Preheat oven to 325 degrees on bake; place parchment paper on a baking sheet and spray with cooking oil – I used coconut oil

2. Add all ingredients into a food processor and process until everything turns into a thick dough form

3. Roll about 1 Tbsp of dough into a balls and slightly flatten with a fork, sprinkle more coconut if you like

4. Bake for 10-15 minutes, depending on how crispy you want them – 15 makes them fairly crispy
