Lemon Coconut Energy Bites

I broke out of my protein ball comfort zone and made something not chocolate related. These actually taste really light and refreshing which is really awesome considering I'll probably use these to eat before my workout. The maca powder in these combined with the collagen should give you a good boost of energy for a snack.

Makes: 12-14 balls

Cook time: 0 min.

Ingredients

  • 1/2 cup coconut flour

  • 2 Tbsp maca powder

  • 1 scoop vanilla coconut Vital Proteins collagen

  • 1 Tbsp chia seeds

  • 1/2 tsp cinnamon

  • 1 Tbsp coconut sugar

  • 1/4 cup almond butter

  • 1/4 cup almond milk

  • 1/2 tsp vanilla extract

  • 1 Tbsp pure maple syrup

  • 1 Tbsp lemon juice

  • zest of one small lemon

  • 2 Tbsp unsweetened shredded coconut (for rolling)

Steps

  1. Combine all ingredients except for shredded coconut in a mixing bowl and mix well until combined; the consistency should look somewhat crumbly, but should combine well when pressed together.

  2. Put shredded coconut into a small bowl and set aside. Roll mix into about 1 inch balls then roll in shredded coconut.

  3. Store in refrigerator.
