This is definitely my new favorite savory breakfasts if I want something quick and don't want to put in a lot of effort. It takes 15 minutes tops, but usually only takes me about 10. Which is super convenient considering how hangry I am when I get home. Enjoy!!!

Ingredients
1 tsp coconut or olive oil
2 eggs
1 handful baby spinach (I like to chop mine)
2 medium sized white mushrooms, or 1/3 cup pre chopped
1/4 cup chopped onion
1 tsp chopped garlic
2 tsp nutritional yeast
salt and pepper to taste
Steps
Sauté oil with onion and mushrooms until onions are soft, then add spinach and garlic and cook for another minute.
Add eggs, salt and pepper, then cook until egg whites are cooked.
Top with nutritional yeast for a cheesy flavor.
