Cinnamon Pecan Pancakes with Sautéed Apples & Greek Yogurt

MERRY CHRISTMAS. Okay so not going to lie... I tried to make my own pancake recipe this morning and I'm not sure what the hell went wrong, but they turned out like a burnt mess. They tasted really good but they would not cook right and kept sticking to my nonstick pan. BUT thank the lord I had Simple Mills pancake mix in my pantry because I was really craving pancakes and was not about to give up. I love this mix because all of the very few ingredients the mix has are listed right on the side of the box and you will recognize every single one. You can add chocolate chips, berries, or nuts into this pancake mix also. Now all I have to do is eat these bomb pancakes, sip my coffee, and wait for the rest of my family to wake up because of course I'm the first one awake.

Prep time: 5 min.

Cook time: 10 min.

Ingredients

  • 1 package Simple Mills pancake and waffle mix

  • 1 to 3 eggs*

  • 1 to 3 Tbsp almond milk, or other nut milk*

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

To top

  • 2 Tbsp greek yogurt

  • 1 small honey crisp apple

  • 1 Tbsp pure maple syrup

  • 2 Tbsp chopped pecans

  • 1 tsp ghee

Steps

  1. Make pancake mix according to ingredients, but add cinnamon and nutmeg, then cook according to instructions.

  2. Chop up apple into cubes, heat ghee and maple syrup in a pan; add chopped apple and pecans, sprinkle with cinnamon and cook until apples are soft.

  3. Drizzle pancakes with greek yogurt (and more maple syrup if you want), then top with apple and pecan mixture.

* The amount of eggs and milk depends on how many the box asks you to use based on how many servings you want to make
