Yes I now sweet potatoes and greek yogurt may sound a little weird, but I promise it's so good, especially if the sweet potato is cold. If you make the sweet potatoes ahead of time then this takes only a few minutes to throw together in the morning for a nutritious, protein packed breakfast.

Ingredients
1 roasted sweet potato, cold*
1 cup greek yogurt (I used 2% plain)
2 tsp nut butter of choice
dash of cinnamon
optional: drizzle of honey / maple syrup, granola, fruit
Steps
Cut open roasted sweet potato and scrape down the sides, add nut butter.
Mix greek yogurt with stevia (optional) and place on the other side of the bowl, top with cinnamon and other desired toppings.
* Roast the sweet potato the night before or a few days before on 400 degrees for 45 min., let cool overnight in the fridge
