HAPPY THANKSGIVING. I know this isn't really a thanksgiving dish, but it's just what I happen to be posting today. At least it's pumpkin, right? And yes, I know this is green but I promise it tastes like pumpkin pie. The spinach in this recipe is visible but you can't taste it at all. I'm not kidding when I have tried to make almost every single meal somehow thanksgiving food related. Whether it's something with pumpkin, sweet potatoes, turkey, or all of the above. For lunch the past two days I've had whipped sweet potatoes with pure maple syrup and turkey #noragrets
Ingredients
- 1/2 frozen banana
- 1/4 C. pumpkin pureé
- 1 C. frozen spinach
- 1 Tbsp gluten free rolled oats (can also use regular)
- 1 tsp pure maple syrup
- 1/2 C. unsweetened almond milk, add more if needed
- 1/2 tsp pumpkin pie spice
- 1/4 tsp cinnamon
- optional: 1 scoop vanilla / unflavored plant based protein powder (use more almond milk if adding)
To Top
- 1 Tbsp unsweetened coconut chips
- sprinkle of your favorite granola (I used Wholee Granolee this time)
- 1/2 tsp chia seeds + a few dark chocolate chips
- 1 tsp Wild Friends pumpkin spice PB
Steps
1. combine all ingredients besides toppings in a high speed blender until combined
2. top with desired toppings
