So the holidays are coming up, and I am going to try to come up with a really good protein ball recipe that is somewhat thanksgiving like. Maybe something with cranberries? Idk we will have to see what I come up with when I actually get time to make them. I have recently been making protein balls so often that it has become a necessity in my fridge. If there's not some little container with protein balls, I feel a little empty inside. This is the first batch I've tried making with banana, and I will definitely be using banana in most other recipes of mine. Even that slight hint of banana tastes so good.
Yes, I know it looks like brown sludge but it taste like chocolate cake. The picture on the right is directly after I put everything in the food processor, and the one on the right is after they sat in the fridge all night.
TIP: refrigerating them overnight makes a huge difference in how they roll together, I barely got any on my hands as opposed to having to constantly wipe of my hands from not pre-refrigerating.
Ingredients
- 1 very ripe banana
- 1 1/2 C. rolled oats
- 1/2 nut butter
- 1 Tbsp chia seeds
- 2 Tbsp cocoa powder
- 1 Tbsp psyllium husks (optional)
- 1/4 tsp vanilla
- 1/4 C. unsweetened almond milk
- 2 Tbsp pure maple syrup
- 1 tsp cinnamon
- 2 scoops chocolate protein powder, or unflavored
- toppings: raw unsweetened coconut flakes & coconut sugar
Steps
1. combine all ingredients besides toppings in a food processor and mix until well combined
2. store in fridge overnight, roll into balls in the morning and top with a sprinkle of coconut sugar and unsweetened coconut flakes
3. best kept refrigerated
