Okay so I call these "breakfast tacos" but you could literally eat these for any meal of the day. The Siete brand coconut flour grain free tortillas are my absolute favs (their almond flour tortillas are a close second) and the only tortillas I will eat usually. If it's a special occasion I will have a flour or corn tortilla, but these are so much easier for your body to digest. Plus the coconut flour ones are only 65 calories per tortilla... like what. You could also add black beans, corn, or another type of cheese such as parmesan or feta. Even add some hot sauce if that's what you're into.
Just fold it up and you're ready to go! I added the sliced avocado on top along with some additional nutritional yeast for some extra cheesy flavor. I even had some egg and spinach filling left over for a second taco (no regrets).

Ingredients
- 2 Siete coconut flour tortillas (or other grain free tortilla)
- 1 organic egg
- 1-2 egg whites
- 1 Tbsp almond milk
- 1/2 ghee
- 1/4 C. chopped onion
- 1 tsp minced garlic
- 1 handful spinach
- 2 tsp nutritional yeast
- dash of turmeric
- salt and pepper to taste
To Top
- 1/4 avocado
- 1/4 organic tomato, diced; you can cook these with the spinach if you don't want raw
- more nutritional yeast (duh)
- Farmhouse Culture garlic dill sauerkraut, so good I promise
- chia seeds (extra fiber is always a necessity)
Steps
1. on medium heat, sauté onion and garlic in ghee for about 3 minutes, then add spinach and cook until wilted (about 1 min)
2. mix egg, egg white(s), almond milk together, dash of salt, pepper, and turmeric in a small bowl until well combined, then add to skillet
3. as egg is cooking, sprinkle nutritional yeast and additional spices to taste; mix around with spatula until egg is cooked
4. pour egg mixture onto another plate, and heat the tortillas up on the skillet until slightly golden around the bubbles, about 1 minute each side
5. scoop egg mixture into the tortilla, and add whatever toppings listed above that you like!
