I kinda threw this one together while I was busy studying and needed a light quick lunch. Only two main ingredients that will fill you up, what more could you ask for in college? You can season this with whatever you prefer, however, I found this new seasoning at natural grocers that I am obsessed with. I use it on actually everything. It's the Simply Organic Garlic n' Herb seasoning. It is made with no salt, but still has such good flavor. They somehow put lemon peel in the seasoning, which really brings out the flavor of it. I ate this cold (the avocado and beans were both left over in my fridge) and it was surprisingly amazing.
If you want to make this into a larger lunch, just add some sides, like carrots and hummus, roasted vegetables, turkey, gluten-free crackers, or anything you want, really.
I think it is also really important to make sure you buy a good brand of organic canned beans with no sodium added. This is the brand that I found at a little restaurant / grocery store called Earth Cafe and Deli in Norman. I know for a fact this brand is also sold in other stores, so it shouldn't be hard to find.
Ingredients
- 2 Tbsp black beans
- 1/2 avocado
- salt and pepper
- Simply Organic Garlic n' Herb seasoning (optional)
Steps
1. sprinkle avocado with salt & pepper then mash up a bit with a fork
2. add black beans (add a dash of salt to the beans if you like), top with Garlic n' Herb seasoning
3. grab a spoon and dig in
