Smoked Salmon Seaweed "Sushi"

Okay so I'm not sure if this really counts as sushi... BUT it's close enough for me. I crave sushi all the time and this is the quickest and easiest thing I've come across making that actually satisfies my cravings. You can eat this as a snack by simply making less seaweed ensembles, or make it into a lunch dish just by making more with more of each ingredient. It's super easy to make more or less of this since you don't technically need exact measurements.

Ingredients

- 1 package roasted teriyaki seaweed snacks (I use GimMe Organics or SeaSnax)

- 2 Tbsp hummus*

- 1 Tbsp Farmhouse Culture dill pickle sauerkraut

- small hand full shredded carrots

- 1/4 avocado (cut up into slivers)

- 1-2 oz smoked salmon

Steps

1. lay out seaweed by however many you want to make

2. spread a small dollop of hummus in the middle of each one

3. top with a pinch of sauerkraut and shredded carrots

4. slice avocado into small slivers and add to top, followed by the smoked salmon (may need to cut up the salmon)

5. fold and enjoy

* This may vary depending on how much hummus you want on each one
