Lazy Thai Chicken Zoodles

When it comes to cooking meals between classes, I become the most careless person ever. This recipe literally takes 10 minutes to make.. idk how it can get more college friendly than that.

I bought the pre-spiraled zucchini noodles and chicken breasts at whole foods. I buy the chicken breasts usually 4 at a time in the grab and go section of the store. It's so easy to just put them in the microwave or toaster oven to warm them up and they're good to go.

PSA: to all people in college, if you live in the dorms or a house, get a hot plate!!!! I thought I could use the microwave for everything but nothing turned out the same

Serves: 2

Ingredients

- Whole Foods Zucchini Spirals (or about 2-4 zucchini, depending on how much you want)

- Two 2-3 oz chicken breasts (got mine at Whole Foods)

- Coconut oil cooking spray (or 1/2 Tbsp coconut oil)

- 1 tsp crushed garlic

- 1/4 C. (divided) Whole Foods brand peanut coconut sauce

- salt & pepper

- optional: Trader Joe's 21 seasoning salute

Steps

1. spray nonstick pan with coconut oil and allow to heat on medium-high

2. sauté zoodles with salt, pepper, and 2 Tbsp peanut coconut sauce until tender (about 3 minutes)

3. meanwhile heat up chicken breasts in microwave about one minute then cut into cubes

4. transfer zoodles to two bowls, top with chicken, 1 Tbsp additional peanut coconut sauce in each, and 21 seasoning salute if wanted
