Pumpkin Chocolate Chip Banana Bread Squares


'Tis the season for pumpkin spice and banana bread... sooooo why not combine both? Pumpkin and banana flavored foods are two of my favorite things to eat during the fall. This recipe legit tastes like soft warm pumpkin banana bread... but in square form. To start off the fall right, this healthy treat is made with coconut oil instead of butter, no added sugar, and coconut flour instead of white flour. The extremely ripe bananas, maple syrup, and a few drops of stevia bring out all of the natural sweetness.

I used dark chocolate chips but you can honestly top with whatever you want (ft. my festive halloween spoon below)

I used an 8x8 square baking dish, but this recipe could easily be turned into full on bread if you use a loaf pan - same time in the oven, same temperature, and same ingredients.

Spread some all natural peanut butter on it.. this is hella good I promise

Ingredients

wet

- 2 very ripe bananas

- 1/2 C all natural peanut butter (I used Wild Friends Pumpkin Spice bc.. fall)

- 1/2 C pure pumpkin pureé

- 3 eggs (room temp)

- 1 Tbsp liquid coconut oil

- 1-2 Tbsp pure maple syrup

- 1/4 tsp vanilla extract

- 6-8 drops pure liquid stevia

dry

- 1/2 C coconut flour

- 1/2 tsp baking powder

- 1 tsp cinnamon

- 1/2 tsp pumpkin pie spice

- 1/3 C dark chocolate chips, plus more for topping

Steps

1. preheat oven to 350 degrees on bake

2. put all wet ingredients into medium/large mixing bowl and mix on low w/ electric mixer until combined

3. add dry ingredients and mix w/ electric mixer again until combined

4. line a square baking pan (I used an 8x8) with nonstick tinfoil or parchment paper and spray with cooking spray, pour in mix, and top with amount of desired chocolate chips

5. bake for 35 minutes

6. let cool for 5 minutes, then cut into however big of squares you want, and enjoy
