Avocado Egg Toast


Okay so I know this one is pretty simple but it's still probably the breakfast that I make most mornings. It's so good and never gets old.

Ingredients

- 1 free range organic egg

- 1/4 avocado

- 1 slice bread (I switch off between Silver Hills Big Little bread and Ezekiel)

- salt and pepper to taste

Steps

1. spray coconut oil in a non stick skillet and warm up on medium heat

2. crack egg into pan and cook covered until it's over easy (about 5 minutes)

3. while egg is cooking, toast bread and heat up avocado for 20 seconds - if it's refrigerated

4. spread avocado on toast, top with egg salt and pepper
