Sautéed Egg and Spinach


Ingredients

- giant handful of spinach (or other greens)

- 1/4 cup chopped onion -2 cloves garlic (1 tsp)

- 1 tsp coconut oil (divided)

- cooking spray -salt and pepper to taste

Steps

1. spray skillet with cooking spray and add 1/2 tsp coconut oil

2. sauté onion and garlic for 2 mins then add spinach

3. sauté spinach until wilted then place aside

4. heat other half tsp coconut oil in separate pan and add egg, cook until egg whites are cooked (about 4 min)

5. serve egg on top of spinach
